In a bowl, whisk together flour, cornstarch, salt, and ice-cold water to make the batter.
Heat oil in a deep fryer or large pan to 350°F (175°C).
Dip vegetables into the batter to coat evenly, then gently lower into the hot oil.
Fry in batches until the batter is golden and crispy, about 2-3 minutes.
Remove with a slotted spoon and drain on paper towels.
