Boil green beans in salted water for 3-5 minutes until tender but crisp. Drain and rinse under cold water.
In a frying pan, heat olive oil over medium heat. Add red onion and garlic, and sauté until soft.
In a large bowl, whisk together vinegar and mustard. Add green beans, sautéed onion and garlic. Toss well.
Season with salt and pepper to taste.
Garnish with fresh parsley before serving.
