Method

Rinse the diced cactus pads under cold water and drain well.
In a large bowl, combine cactus pads, chopped onion, tomatoes, cilantro, and minced jalapeno.
In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
Pour the dressing over the salad and toss gently to combine.
