Heat the sesame oil in a large pan over medium heat.
Add the garlic and sauté until fragrant.
Increase the heat to medium-high and add the peas and carrots, corn, and cooked rice. Stir well to combine.
Pour the soy sauce, ground ginger, and black pepper over the rice mixture. Stir well and cook for 5-7 minutes, or until the rice is heated through.
Remove from heat and stir in the green onions and cilantro.
