This vegan Wild Rice Pilaf is a nutritious blend of wild rice, crunchy almonds, sweet dried cranberries, and sautéed onions, all tossed with a splash of citrusy orange zest and fresh herbs.
Method
Tested in our kitchen
In a medium saucepan, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
Add wild rice and toast for a few minutes, stirring frequently.
Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer until the rice is tender and the liquid is absorbed, about 45 minutes.
Stir in almonds, dried cranberries, and orange zest.
Adjust seasoning with salt and pepper.
