This Classic Vegan Gumbo is packed full of okra, vegetables, and beans.

Heat the oil in a large pot over medium heat. Add the flour, stirring continuously, to make a roux. Cook until it turns a dark caramel color.
Add onions, bell peppers, celery, and garlic to the pot. Cook until vegetables are tender.
Add okra, diced tomatoes, vegetable broth, bay leaves, thyme, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 45 minutes.
Add red beans and cook for an additional 15 minutes.
Serve over rice.
