Method

Soak the beans overnight in plenty of water.
Drain and rinse the beans, then boil them in fresh water for 40 minutes until almost tender.
Preheat the oven to 180°C (350°F).
In a skillet, heat olive oil over medium heat and sauté the onion until translucent.
Add the garlic, chopped tomatoes, tomato paste, oregano, bay leaves, salt, and pepper to the skillet, and cook for a few minutes.
Cover with aluminum foil and bake for 1 hour.
Remove the foil and bake for another 30 minutes until the top is slightly caramelized.
Garnish with parsley before serving.
