Method
Tested in our kitchen
Rinse the sushi rice under cold water until the water runs clear.
Cook rice with water according to package instructions.
In a pan, heat vegetable oil over medium heat. Add tofu and fry until golden brown. Set aside.
In the same pan, add a bit more oil if needed, and saute carrots, bell peppers, and broccoli until just tender.
Whisk together soy sauce, mirin, and grated ginger in a small bowl.
Serve the vegetable and tofu mixture over the cooked rice, garnished with green onions and sesame seeds.
