Bake the puff pastry according to package instructions and let cool.
Mix vegan cream, sugar, cornstarch, and vanilla in a saucepan. Heat until thickened.
Spread the mixture on half the pastry sheets, then cover with the other half.
Mix icing sugar, plant-based milk, and lemon juice for the glaze. Spread over the top pastry layer.
Chill before serving.
