Crispy on the outside, tender and flavorful on the inside, these vegan shrimp croquettes are a crowd-pleaser made with plant-based ingredients.

Rehydrate the TVP in vegetable broth until soft, then drain any excess liquid.
In a bowl, combine the hydrated TVP, breadcrumbs, flour, nutritional yeast, kelp powder, garlic, lemon juice, salt, and pepper. Mix well.
Form the mixture into small, oblong shapes resembling croquettes.
Heat oil in a frying pan over medium heat. Fry the croquettes until golden brown on all sides.
Serve hot with your favorite vegan dipping sauce.
