Method
Tested in our kitchen
In a large bowl, mix flour and salt. Add vegan butter and combine until the mixture resembles coarse crumbs. Gradually add cold water and stir until the dough comes together. Chill for 30 minutes.
Heat olive oil over medium heat. Add onions and cook until translucent. Add mushrooms and cook until all moisture evaporates. Season with smoked paprika, salt, and pepper. Set aside to cool.
Preheat oven to 375 degrees F (190 degrees C).
Roll out the dough on a floured surface to about 1/4 inch thick. Cut out circles using a large cookie cutter.
Spoon the mushroom mixture onto half of each dough circle. Fold the dough over the filling to create a half-moon shape. Press edges together with a fork to seal.
Serve warm or at room temperature.
