In a medium saucepan, bring the almond milk to a boil.
Slowly whisk in the semolina and sugar, reducing the heat to low.
Continue to whisk until the mixture thickens, about 5-10 minutes.
Remove from heat and stir in the vanilla extract.
Pour the pudding into bowls and allow to cool slightly. It will continue to thicken as it cools.
