In a large bowl, mix flour and salt. Gradually add water and knead until smooth dough forms. Cover and let rest for 30 minutes.
Mash the boiled potatoes. In a pan, heat olive oil over medium heat and sauté onions until translucent. Add mashed potatoes, smoked paprika, cumin, red pepper flakes, salt, and pepper. Cook for 5 minutes. Set aside.
