Heat the olive oil in a large pan over medium heat. Add the onion and garlic, sautéing until soft and fragrant.
Add the crumbled tofu, paprika, and nutritional yeast, cooking for a few minutes until the tofu is lightly browned.
Stir in the chopped spinach, season with salt and pepper, and cook until the spinach has wilted.
Serve hot with a squeeze of lemon juice.
