This refreshing and zesty Vegan Larb Salad features finely chopped vegetables and tofu, seasoned with lime juice, chili flakes, and fresh herbs.

In a bowl, whisk together soy sauce, lime juice, brown sugar, and chili flakes.
Heat a non-stick skillet over medium heat, add the crumbled tofu, and cook until slightly browned.
Toss the tofu in the sauce mixture and cook for an additional 2 minutes.
Remove from heat and allow to cool slightly.
In a large bowl, combine tofu, shallots, mint, cilantro, green onions, roasted rice powder, and lemongrass if using.
