In a mixing bowl, whisk together the flour, plant-based milk, melted vegan butter/oil, sugar (if using), and salt until smooth.
Heat a non-stick pan over medium heat and lightly coat with vegan butter or oil.
Pour a small amount of batter into the center of the pan, swirling to spread evenly.
Cook for 1-2 minutes, or until the edges lift from the pan; flip and cook for another minute.
Repeat with remaining batter, adding more vegan butter or oil to the pan as needed.
