Soak julienned burdock root in water for 10 minutes, then drain.
Heat sesame oil in a skillet over medium heat. Add burdock root and carrot. Stir-fry for about 5 minutes.
Add soy sauce, sugar, mirin, and chili flakes if using. Reduce heat and cook until most of the liquid has evaporated.
Serve garnished with sesame seeds.
