A heartwarming and nutritious white bean soup, known as the national dish of Greece, perfect for colder months.

Rinse soaked beans and boil in fresh water for 10 minutes. Drain.
In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, cooking until softened.
Add beans, vegetable broth, diced tomatoes, bay leaves, and oregano. Bring to a boil, then reduce heat and simmer for about 50 minutes, or until beans are soft.
Season with salt and pepper. Serve hot, garnished with parsley.
