This Creamy Vegan Corn Soup blends the natural sweetness of corn with the richness of coconut milk to create a heartwarming dish that’s perfect for any day of the year.
Method
Tested in our kitchen
Heat olive oil in a large pot over medium heat.
Add onions and garlic, sauté until soft.
Stir in the corn kernels, cook for 2 minutes.
Add vegetable broth and bring to a boil.
Reduce heat and simmer for 15 minutes.
Stir in coconut milk and season with salt and pepper.
Cook for another 5 minutes on low heat.
