Vegan Lentil Soup
This nourishing Classic Vegan Lentil Soup combines the rich flavors of lentils with aromatic vegetables and spices.
Method
Tested in our kitchen
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until onion is translucent.
Add carrots and celery, cook for 5 minutes.
Stir in cumin, curry powder, thyme, and bay leaf, cook for 1 minute.
Add lentils, vegetable broth, and tomato paste. Bring to a boil, then reduce heat and simmer for about 30 to 35 minutes or until lentils are tender.
Serve hot, garnished with fresh parsley.
