Peel and chop the plantains.
In a blender, combine plantains, coconut milk, oats, flaxseed, cinnamon, nutmeg, vanilla, and salt. Blend until smooth.
Pour the mixture into a large saucepan and cook over medium heat, stirring constantly to prevent sticking.
When the porridge begins to bubble, reduce heat to low and simmer for 10 minutes, stirring frequently.
Stir in maple syrup and cook for another 5 minutes.
