Prepare vegetables and mango.

Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 15-20 seconds until just pliable.

Lay wrapper on a clean, wet cloth and place a handful of the veggies, mango, cilantro, and mint in the center.

Fold in the sides of the wrapper and then roll tightly.
