Method
Tested in our kitchen
Wash and soak the Djon Djon mushrooms in 3 cups of hot water for 20 minutes. Strain and reserve the liquid.
In a pot, heat the coconut oil over medium heat. Add the chopped onions, garlic, and bell peppers, and sauté until onions are translucent.
Stir in the carrots and peas, then add the washed rice, mixing thoroughly.
Pour the reserved mushroom liquid over the rice. Season with salt and pepper.
Bring the mixture to a boil, then reduce heat, cover, and simmer for 20 minutes or until the rice is cooked.
