Crispy on the outside, gooey on the inside, these vegan bitterballen are filled with a savory mushroom and onion mixture, encased in crunchy breadcrumbs.
Method
Tested in our kitchen
Melt vegan butter in a pan and sauté onion and garlic until soft. Add mushrooms and soy sauce, cook until mushrooms are soft.
Stir in flour to form a roux, then gradually add vegetable broth to make a thick mixture. Season with salt and pepper, then chill until firm.
Form mixture into balls, roll in breadcrumbs, and deep-fry until golden brown.
