Method
Tested in our kitchen
Mix cornmeal, water, and salt in a bowl until a sticky dough forms. Allow to rest for 5 minutes.
Divide dough into 12 small balls, flatten each to about 1/2-inch thickness.
Cook in a hot skillet with oil until each side is golden brown, approximately 6 minutes per side.
Sauté onion and garlic until golden, add black beans and paprika, cook for 5 minutes.
Serve arepas opened with a spoonful of caramelized plantain and a scoop of black bean mix.
