Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
In a small bowl, mix the flaxseed meal and water. Set aside for 5 minutes to thicken.
In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted coconut oil into the mashed bananas.
Mix in the coconut sugar, flaxseed mixture, and vanilla extract.
Sprinkle the baking soda, salt, and cinnamon over the mixture and blend well.
Pour the batter into the prepared loaf pan. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let the bread cool in the pan for a few minutes. Then, transfer the bread to a wire rack to cool completely before slicing.
