Preheat oven to 425°F (220°C).
In a mixing bowl, toss the sliced carrots with olive oil, maple syrup, salt, and pepper until they are well coated.
Spread the carrots out on a baking sheet in a single layer.
Roast in the preheated oven for about 20-25 minutes, or until carrots are tender and glaze is caramelized, stirring once halfway through.
Serve warm, garnished with fresh parsley if desired.
