Preheat your oven to 400°F (204°C). Prick potatoes with a fork and bake for 50 minutes, or until tender.
Let the potatoes cool slightly, then cut in half lengthwise and scoop out the flesh, leaving a small border of potato on the skin.
Increase the oven temperature to 450°F (232°C). Brush both sides of the potato skins with olive oil and season with salt and pepper. Place skin-side up on a baking sheet and bake for 10 minutes.
Flip the potato skins and bake for an additional 10 minutes, or until crisp.
Fill each skin with vegan cheese, black beans, and corn. Return to the oven for 5 minutes, or until the cheese has melted.
