Method
Tested in our kitchen
Heat olive oil in a large pot over medium heat.
Add onion and garlic, and sauté until onions are translucent.
Add bell pepper and cook for another 5 minutes.
Stir in vegetable broth, hominy, and diced tomatoes, bringing the mixture to a boil.
Reduce heat and simmer for 30 minutes.
