Mix cabbage, carrot, mushrooms, tofu, soy sauce, sesame oil, and ginger in a bowl.
Place a spoonful of filling in the center of each wonton wrapper.
Moisten the edges of the wrapper with water, fold and seal.
Steam the shumai over boiling water for about 20 minutes.
Serve hot with soy sauce for dipping.
