In a large pot, heat the sesame oil over medium heat. Add garlic and ginger, sautéing until fragrant.
Add the vegetable broth, water, soy sauce, and miso paste, stirring until well combined. Bring to a simmer.
Add the noodles and cook according to package instructions.
In a separate pan, sauté the mushrooms until tender.
Divide the cooked noodles into bowls, top with broth, sautéed mushrooms, corn, and scallions. Serve hot.
