Combine warm water, yeast, and sugar in a bowl and let sit for 5 minutes.
Add flour and salt to the yeast mixture and knead until smooth.
Cover the dough and let it rise for 1 hour.
Preheat oven to 425°F (220°C).
Bring 10 cups of water to a boil and add baking the soda.
Boil each pretzel for 30 seconds, then place on a baking sheet.
Sprinkle with coarse salt and bake for 12-15 mins until golden brown.
