Marinate tofu cubes in vegan yogurt mixed with garam masala, turmeric, cumin, and lemon juice for at least 1 hour or overnight.
In a large pan, sauté onion, garlic, and ginger until soft.
Add the marinated tofu and cook for 5 minutes.
Add crushed tomatoes and coconut milk, and simmer for 20 minutes.
Season with salt, garnish with cilantro, and serve with rice.
