A refreshing and colorful bowl of marinated tofu cubes, fresh vegetables, and rice, topped with a tangy and sweet sauce.
Method
Tested in our kitchen
Press tofu to remove excess moisture, then cut into cubes.
In a bowl, whisk together soy sauce, sesame oil, maple syrup, and rice vinegar. Add tofu cubes and marinate for at least 30 minutes.
Prepare bowls with a base of brown rice. Top with marinated tofu, avocado, cucumber, carrots, green onions, edamame, and sesame seeds.
Drizzle with any remaining marinade as dressing before serving.
