Method
Tested in our kitchen
Preheat oven to 350°F (175°C).
In a large bowl, cream together vegan butter and granulated sugar until light and fluffy.
Mix in vanilla extract and almond milk until well combined.
Gradually add flour and salt to the wet mixture to form a soft dough.
Roll out dough on a floured surface to about 1/4 inch thickness and cut into circles using a cookie cutter.
Allow to cool completely.
Spread raspberry jam on half of the cookies and top with another cookie to form a sandwich.
Mix powdered sugar and lemon juice to create a smooth icing.
Drizzle icing over the cookies and allow to set before serving.
