Method

Combine warm almond milk, sugar, and yeast in a bowl. Set aside to activate yeast, about 10 minutes.
Mix flour and salt in a large bowl. Make a well in the center, pour in yeast mixture and olive oil. Mix to form a soft dough.
Knead dough on a floured surface for 10 minutes until smooth.
Place dough in a greased bowl, cover, and let rise in a warm area until doubled in size, about 1 hour.
Combine cranberries, pecans, orange zest, and maple syrup in a bowl.
Slice the roll in half lengthwise, then twist the two strands around each other, keeping the cut sides facing up. Form a circle and pinch ends together.
Transfer to a baking sheet, cover lightly, and let rise for another 20 minutes. Preheat oven to 375°F (190°C).
Bake for 25 minutes or until golden brown. Let cool before serving.
