Method

1. Heat 2 tablespoons of oil in a pan over medium heat. Add the onions and sauté until translucent.
2. Add garlic and ginger, cook for another 2 minutes.
3. Stir in cumin, turmeric, garam masala, and paprika, cook for 1 minute until fragrant.
4. Add crushed tomatoes and simmer for 10 minutes.
5. In a separate pan, heat the remaining oil and brown tofu cubes until golden.
7. Season with salt, garnish with cilantro, and serve.
