In a large pot, heat the olive oil over medium heat.
Add the onions and a pinch of salt, cook until caramelized, about 25-30 minutes, stirring frequently.
Add garlic and cook for another minute.
Pour in the white wine and deglaze the pot, scraping up any browned bits.
Add the vegetable broth, bay leaf, and thyme. Bring to a simmer and cook for 15 minutes.
Preheat the oven broiler.
Ladle the soup into oven-safe bowls. Place a slice of bread on top of each, then sprinkle with vegan cheese.
Broil until the cheese is melted and bubbly.
Serve hot.
