In a large bowl, mix together cabbage, carrot, mushrooms, scallions, and tofu.
Season the mixture with soy sauce, sesame oil, and ginger, then stir well to combine.
Take a dumpling wrapper, place a spoonful of the filling in the center, moisten the edges with water, fold in half, and press to seal, ensuring no air is trapped inside.
Repeat with the remaining wrappers and filling.
Steam the dumplings for about 10 minutes or until translucent.
Serve hot with a side of soy sauce for dipping.
