Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
Peel the yuca root and cut it into fries-sized sticks.
Boil the yuca fries for about 10 minutes until slightly tender but not fully cooked.
Drain the yuca fries and pat them dry with a towel.
Toss the fries with olive oil, salt, and any additional seasonings.
Bake for 15-20 minutes, flipping halfway through, until the fries are golden and crispy.
