Rinse black beans and soak overnight.
In a large pot, heat olive oil over medium heat. Add onions and garlic; sauté until soft.
Drain beans and add to the pot along with 6 cups of water, cumin, bay leaf, salt, and pepper.
Bring to a boil, then reduce heat and simmer, covered, for about 2 hours or until beans are tender.
Adjust seasoning as needed. Serve garnished with fresh cilantro.
